About Key Limes and Pie
“Key” limes (Latin name: Citrus aurantifolia ‘Swingle’) are small, yellowish citrus fruits that are quite different from the darker green “Persian” limes we see year-round in our local supermarkets.
Key limes are also called Mexican or West Indian limes. They are about the size of a ping-pong ball or a golf ball. They have thinner skin than Persian limes and are not as easily shipped, making them difficult to find. Key limes are sweeter but more tart and aromatic and, unlike the green juice of Persian limes, their juice is a pale yellow.
The creator of the first Key Lime pie was never documented, but food historians say the pie originated in the Florida Keys. Because the Keys were isolated before the railroad was opened in 1912, fresh milk was hard to come by, so authentic Key lime pie is made with canned sweetened condensed milk. This is the ingredient that gives the pie its smooth, creamy filling.
