Madagascar Vanilla

Our Vanilla Cupcakes are deliciously unique, and part of the reason is the vanilla we use. Madagascar vanilla is unique because it is both smooth and has a deep, rich vanilla taste. These two attributes are rarely found together. It actually does come from the Bourbon Island of Madagascar. The vanilla is harvested from the orchids that grow in the region.
When the vanilla beans are harvested in Madagascar, they have to dry out before they can be shipped off for use. They actually sun-dry the bean pods out in the open in batches on a large surface, like a table. The delicious vanilla aroma floats up to three or four miles away when there is a gentle summer breeze.
This very traditional process is passed down from generation to generation, and the locals have it down to a science. The vanilla orchids must actually be pollinated by hand once per year, and the flowers will only bloom for a very short window of time. Vanilla is the second-most labor intensive crop around, so the process is not easy to learn.
Uses and Flavors
The vanilla itself has over 300 flavor compounds, and using the bean flecks instead of the vanilla extract gives a much deeper flavor. The bean flecks in our cupcake provide a creamy, rich flavor that makes it melt in your mouth. Its sweet, buttery aroma is certain to quickly draw a crowd.
